Double is a fourteen-seat counter tucked into the 18th arrondissement of Paris. Chef Ryoko Masaki composes a single seven-course menu, where Japanese precision meets Italian cooking. Each service is a conversation between the kitchen and the room, set to the rhythm of the seasons and the chef's instinct.
Ryoko Masaki comes from Fukushima. Before joining Double, he was sous-chef at Davia, in Nice. From that path comes what the kitchen does here: a Japanese technique laid over Mediterranean cooking.
The meal unfolds in seven courses and lasts about two hours. Two seatings each evening, at 7.15pm and 9.30pm. The menu is the same for every guest; dietary requirements and allergies are accommodated when flagged at the time of booking.
Natural wines, a selection of sakés, cocktails and non-alcoholic drinks. Pairings follow the menu, or are built to order.
